So its starting to get cold and rainy… This means it time to go for… the winter comfort foods. The ones that you go to, to make you feel happy during the dark, cold evenings.
This is my minestrone soup.
You will need
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- small pasta
- 3 sticks of celery
- 2 carrots
- 1 tin of chopped tomatoes
- 2 table spoons of tomato puree
- 1 tin of cannelloni beans
- 1 medium potato
- Any other vegetable of your choice, courgette, spinach leaves, peppers
Heat a pan add some olive oil, when the oil is warm add in Italian herbs and chilli flakes. Add in the chopped onion, when it softens add in the minced garlic.
Pre chop all the veg into small chunks and add it in. Cook it for about 5 minutes so they start to cook through. Add in a tin of chopped tomatoes and the tomato puree. Mix it all together. Add in the beans and boiling water. Enough to cover it all, boil it all together until you get the right constancy. Add more water if required.
Ten minutes before you are going to eat, add in the pasta. Boil it all, until the pasta is cooked.
Serve it with garlic baguette, plain bread or toast.
I also like having it will a side of green salad.
