Stuffed egg pancake is a protein filled meal. It is fast, healthy and tasty.
You will need;
- Left over meat or veg, anything you fancy chopped up in a mince.
This works best with a non-stick pan.
1. Beat 2 eggs, add salt and pepper to taste. If you need to keep a lower cholesterol diet, this recipe should also work with egg-whites only, though you might need one more egg.
2. Pour the mixture into a warm non-stick pan and move the egg mixture on the pan so that you have covered the whole surface. It has to be warm so that the egg sticks to the pan as you move it.
3. When one side is cooked flip it over. In the center of the pancake place your mixture, fold the pancake over and serve.
You can use any dry chicken or fish in this recipe, I used prawn. You can also add really finely chopped vegetables/herbs into the egg mixture to give it a twist.
