A quesadilla is a Mexican starter that my little man loves. I often find it hard to make different dinners for all of us, so I decided to try and make a adult version that we could have as well.
It was good, I think there are a few changes I would make.
You will need
- Peppers – sliced
- Red onion – Sliced
- Garlic – minced
- Cheese – grated
- Mexican Powder
- Black beans (if you want) I did not use them as I served it with my Mexican bean dip. I would add them in when I make it next.
- Side of your choice, Salsa, Sour cream, Guacamole.
Heat oil in a pan, wait for it to be hot. Add in the onions. Do not mix them, let them sit it the hot oil and get golden. When they are golden, add in the peppers and garlic, give it a quick mix and let them sit in the heat. They will go golden brown. When they do, add the Mexican Powder (I would also add in the black beans at this point) and salt. Let it all sit and char!
Heat the fajita in a pan, add the mixture to half and put cheese on top, fold it in half and cook it so it gets golden and crispy. You will need to brush oil on the outside to get it crispy.
For a twist, you could add minced chicken in with the veg… YUMMY! Chicken quesadilla.
