We eat potato curry often. Typically prepared in the same way. So, this is my twist on the classic potato curry.
You will need:
Heat oil in a pan, add in cumin seeds, mustard seeds, sesame seeds and asofiteda. Add in the diced potatoes. Once mix it all together add salt and turmeric powder. Give it one more mix and cover. You can add chilli powder or fresh green chilli if you want.
Once the potatoes are semi cooked add in some diced tomatoes. With this I add a pinch of clover powder and a large pinch of cinnamon powder. Mix it all together and cook. Garnish with chopped coriander and serve.
You can eat this on a bed of rice or quinoa
with yogurt and roti or naan.
