Minty beans- is a bean salad with a mint dressing. A great spring/summer dish.
It is healthy, tasty and yummy. A great salad for lunch or a salad side with a main dish.
One that we all enjoy.
You will need
- Mixed beans of your choice, you can pick up a tin of mixed beans if you don’t want to make a lot.
- Cucumber diced (optional)
- Tomatoes diced (optional)
- Mint sauce
- Fresh mint for garnishing if you want
Peel and dice the cucumber. Chop the tomatoes into similar size pieces.
In a bowl mix a table spoon of mint sauce with olive oil, salt and pepper, whisk it together.
Add the beans, cucumber and tomatoes into the bowl and mix it up!
Minty beans are ready to go. Mr.Man loves it, and the best bit is I can whip in up in about 10 minutes or less.
