It’s one of my favourite ways to eat pasta. This is our veggie lasagne!!
Pick vegetables of your choice:
Any veg you choose.
One pack of puy lentils (I like the ready cooked ones. If you get the dry ones boil them first)
Red lasagne sauce: jar or home made
White sauce: jar or home made
Cheese for the top
Dice all the vegetable and mince the garlic. Heat olive oil in a pan, add Italian herbs and onions, add in the potatoes and carrots, cook until the potatoes start to soften, add the garlic and then add in the other veg. Once they are cooked add in the puy lentils.
Then add the red sauce and a little water and cook! The lentils should be soft.
That’s all the hard part done, now you just need to put it together.
White sauce in the bottom of the lasagne dish, then pasta sheets, then the vegetable mixture…

Repeat, until the dish is full. The last layer needs to be pasta topped just with white sauce.
Bake this in the oven, at 180ºC for 30 minutes, then top with cheese – I use mozzarella and cheddar.
Cook again until the cheese is golden!!!
