I really enjoy making and eating bits that are cooked in the oven. After the preparation is done, it really doesn’t need much work. The oven does the hard work while you sit and sip a glass of wine 😉
I often prepare and freeze items that make dinner so much easier. One of those is Indian style Green Pesto
Indian Green Pesto needs;
Mint about 15 leaves
Coriander one bunch
Juice and zest of one lemon
Garlic about 3 bulbs
Green Chilli to taste
Salt and Pepper to taste
Olive oil enough to make a paste
Blitz all of the ingredients into a paste.
I can do so much with this. I marinate cassava chips and cook them in the oven.
My favourite way to use this is to marinate lamb chops or chicken cubes and cook them in the oven until they are cooked and dry…Its delicious! Vegetarians fear not it tastes just as good when panner is prepared the same way.
You can also add some coconut milk and make a thai curry style dish, just add your favourite vegetables and meat!
My husband spreads it on toast tops with cheese and grills it.
