Indi-eggs are my version of Indian eggs. I would say it is scrabble eggs with an Indian twist.

Serves 5-6
8 eggs
2 peppers (I choose red and green)
1 Onion
8-10 Mushrooms
Green chilli (as you like)
Dice all of the veg, and finely chop the coriander and chillies.
Heat oil in a pan and add cumin seeds, once they pop add in the veg.
Cook all the veg, don’t add salt as, if you do, the veg will release water.
Whisk eggs and add salt and pepper.
Add the eggs into the cooked veg. And let it all cook together. Stir the mixture to give it a scrabble egg like texture.
This is perfect for brunch or lunch. I love it with crusty bread.
