Roast chicken quinoa salad.
You will need;
- Lime juice
Left over chicken?? Not a problem. Take it of the bone and dice it.
Add it to your boiled cooled quinoa. Add in cucumber, onion, tomatoes and coriander. One table spoon of olive oil, Lime juice salt and pepper.
Mix and enjoy. So fast, easy and yummy!
A nice healthy summer dinner or lunch.
